Freekeh the miracle grain
A forgotten grain returns. From the golden plains of Palestine comes our Premium Freekeh. Obtained from the finest wheat grains and selected with care, it is very rich in nutrients. It has twice as much fibre as quinoa and a very high protein content. Women's cooperatives that harvest the grain and then gently roast it give it its great and distinctive taste. The still unripe grains develop a nutty, smoky aroma. Freekeh is also known as roasted green wheat, frikkeh or farikah.
Things to know about wholemeal
Freekeh means "the rubbed one" in ancient Aramaic. The story goes that Freekeh was first discovered thousands of years ago when a wheat storehouse was set on fire and charred wheat heads were rubbed to release green grains.
"Crushed or Whole Grain Frikkeh
There are two types of Freekeh, "crushed" and "whole". The crushed freekeh is broken down into smaller pieces so that it can be cooked more quickly and has a softer texture than the still whole grain. Traditionally, crushed freekeh is used to stuff peppers or chicken.
This delicious roasted green spelt wheat is ideal as a substitute for rice and bulgur. It is used to stuff vegetables or prepared as a warm soup. It is also very good as a cold dish in salads mixed with fresh herbs Ala Taboulé.
It is very easy to handle and is boiled like rice. Depending on how firm it is to the bite, it will be kept in boiling water for a shorter or longer time.
